The scallop, Pecten maximus, is the flagship species of Normandy’s fisheries. It is fished by nearly 300 professional Normandy fishing vessels throughout the eastern English Channel, but the Baie de Seine is the heart of the stock. But before it reaches our plates, how does it live, how does it reproduce, how and under what conditions is it harvested, and how are stock assessments carried out?
